Mackerel fillets are a perfect option if you want to add a touch of protein to your toast. What do you think of this combination with sun-dried tomatoes and toasted bread?
It's a very simple recipe, ready in just a few minutes, ideal for a light dinner, a different appetizer, or even a savory breakfast.
Ingredients (for 4 toasts)
-
4 slices of bread (rustic, sourdough or wholemeal)
-
1 can of Lago Paganini mackerel fillets in olive oil
-
4–6 sun-dried tomatoes in oil
-
1 clove of garlic (optional)
-
2–3 tablespoons of cream cheese or whipped cottage cheese (optional)
-
Extra virgin olive oil (you can use some of the oil from the can)
-
Salt and pepper to taste
-
Fresh parsley or chopped basil to finish
How to prepare toast
1. Toast the bread
Toast the bread slices until they are crispy on the outside but still soft on the inside. You can do this in a toaster, frying pan, or griddle.
2. Optional: rub with garlic
If you like the flavor, peel the garlic clove and gently rub it on the surface of the toasted bread. It will add an aromatic touch without being overpowering.
3. Prepare the base
Spread a thin layer of cream cheese or whipped cottage cheese on the bread slices. This step is optional, but it helps add creaminess as the ingredients adhere better.
4. Add the sun-dried tomatoes
Drain the sun-dried tomatoes slightly and cut them into strips or small pieces. Distribute them over each toast, creating a base of intense flavor.
5. Place the mackerel fillets
Open the can of Lago Paganini mackerel, drain slightly (reserving some of the oil) and place the fillets on the toasts, whole or in large pieces, depending on the size of the bread.
6. Season and finish
Add a drizzle of the oil from the can over the toast to enhance the flavor. Adjust the salt and pepper and finish with fresh parsley or chopped basil.
And ready to serve: simple toasts, with good protein and lots of flavor.
