There are days when you crave something quick but made with quality ingredients. These sardine toasts with avocado cream are a perfect option for a savory breakfast, a satisfying afternoon snack, or a light dinner with a taste of the sea.
With some good canned sardines and a couple of pantry ingredients, you'll have a simple, balanced and flavorful dish.
Ingredients (for 4 toasts)
-
4 slices of rustic or sourdough bread
-
1 can of sardines in olive oil Lago Paganini
-
1 ripe avocado
-
Juice of ½ lemon
-
1 tablespoon of extra virgin olive oil (you can use some of the oil from the can)
-
Salt and pepper to taste
-
A few arugula leaves or tender shoots (optional)
-
Flakes of salt or a touch of sweet/hot paprika to finish
Step by step
1. Toast the bread
Toast the bread slices in a toaster or in a frying pan until they are crispy on the outside, but still soft on the inside.
2. Prepare the avocado cream
In a bowl, mash the avocado with a fork until creamy. Add the lemon juice, a tablespoon of olive oil, salt, and pepper to taste. Mix well.
3. Assemble the toasts
Spread a generous layer of avocado cream on each slice of bread. Carefully place the drained sardines on top so they retain their shape.
4. Add the finishing touch
If you want to add freshness and color, add some arugula leaves or tender sprouts on top. Finish with flakes of salt or a little paprika, sweet or hot according to your taste.
Tricks and variations
-
If you prefer a more citrusy touch, add lemon zest over the sardines just before serving.
-
You can substitute the avocado with a base of grated tomato or homemade hummus.
-
For a more substantial version, add a chopped or sliced hard-boiled egg on top of the avocado.
Why use canned sardines?
Lago Paganini sardines in olive oil are perfect for these kinds of quick recipes: they have a juicy texture, an intense flavor, and are ready to serve. They are also a natural source of protein and omega-3 fatty acids, making these toasts an ideal way to easily incorporate oily fish into your daily routine.
